This recipe is from allrecipes.com. I haven't tried it yet myself (it's todays project), but it sounds delish, doesn't it? Best part about it is you put it in a Crock-Pot and walk away!!
Ingredients
1 pound shredded, cooked chicken
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil
Directions
1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
2. Preheat oven to 400 degrees F (200 degrees C).
3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

Simple Marinated Steaks & Potatoes
This First recipe is one I created myself. Simple and good for those nights when you have a few minutes earlier in the day to prepare the marinade. :)
Marinate Steaks for 1-2 hours (your choice cut) in:
3tbsp Olive oil,
3 tbsp Soy Sauce,
2 tbsp Garlic,
and season with black pepper to taste.
Cut 7-8 potatoes in quarters. Place in oven safe dish.
Lightly coat with Olive Oil
Season with Garlic Powder, Pepper and Salt to taste
Place dish in the oven at 375 degrees, until potatoes are soft when poked with a fork.
Either grill steaks or broil them in the oven. Serve with any kind of veggie you kid will eat! (like there are very many!)

Hello all,
I know for me that life always has a way of throwing me a curve ball when I least expect it. And sometimes that can get in the way of making and enjoying healthy, yummy meals for me and my family. As a single mother I try very hard to give my son the best in everything, but most importantly I try to get him to eat healthy, filling meals that are easy on the budget and don't take a lot of time to prepare. That's why most of my meals end up in the Crock-Pot, but they always turn out delicious. I've shared a few of the recipes I've used with friends and have received excellent feedback on them, and have decided to share them with a wider range of people. Keep in mind, most of these recipes I did not come up with on my own (and I will give you the name of the site/cook book I got it from), but a few I did and they turned out great!!
So I hope you enjoy these recipes. And please give me your feedback about them. Let me know how your family enjoyed it and if you decided it's a "keeper" (or not).
